Cuvée Prestige Caroline is a Provence rosé named after André Roux's great-granddaughter, whose dedication to the Tibouren variety continues to this day among the family's descendants (5th generation). Caroline is a limited edition cuvée made from a selection of specific organic vineyard plots of the Tibouren variety, which are over 30 years old and located on the limestone and schist slopes of Clos Cibonne overlooking the sea. Here, the approach is more modern, combining the estate's historical journey and the know-how of five generations with techniques such as aging in 300-liter oak barrels rather than in the traditional ancient foudres found in the winery. Although a rosé, this wine has the structure to improve in the bottle for over a decade. A wine that, although a rosé, should be approached like any serious red wine in your cellar.
Caroline is the daughter of Claude and Brigitte, André Roux's great-granddaughter, and the youngest generation of Clos Cibonne along with her brother Olivier. The Cuvée that bears her name is produced from grapes that are pressed immediately after the morning harvest and transferred to stainless steel tanks where fermentation takes place with indigenous yeasts. Before fermentation is complete, the wine is transferred to 300-liter French oak barrels where it undergoes bâtonnage. The wine will remain on the lees and mature for a total of 10 months in oak barrels. A great rosé wine, alongside the oxidative rosés of Lopez de Heredia or Sylvain Pataille's Marsannay rosé, combining red fruit, spices, and an exotic character. A wonderful balance of freshness and aromatic expression.
