Cuvée Céleste represents the most ambitious and refined expression of Xinomavro ever crafted by Karanika Estate. A zero-dosage sparkling wine, it offers a rare journey into the captivating world of the estate's traditional-method wines, driven by the kind of exhilarating acidity that courses through the entire palate—invigorating in the same way that splashing your face with cold water first thing in the morning instantly awakens the senses. This Blanc de Noirs is made entirely from Xinomavro sourced from old, ungrafted vines across three distinct vineyard sites in Amyndeo. It displays an almost sculpted crystalline purity and radiates energy with every sip. Five to seven years of ageing on the lees bring remarkable depth, complexity, persistence and an exceptionally fine mousse, while its signature saline minerality, notes of caramelised lemon and the multilayered nuances of autolysis come together in one of the most complete expressions of Greek sparkling wine. The finish is extraordinarily long, complex and vibrant, leaving a profound sense of harmony and completeness.
Cuvée Céleste is produced from old, ungrafted Xinomavro vines in Amyndeo, planted on sandy-clay soils at an altitude of 650 metres. Only the free-run juice is used, with no press wine included. The first fermentation takes place in large foudres following a natural, low-intervention approach, with no added sulphur or oenological additives. The wine then undergoes a second fermentation in bottle and matures on its lees for 57 to 84 months before being disgorged with no dosage (Brut Nature). The result is a Blanc de Noirs of remarkable precision and crystalline purity. Its vibrant acidity takes centre stage without ever becoming austere, striking a perfect balance between freshness and absolute dryness on one hand, and the creamy, toasted and subtly smoky complexity of extended autolysis on the other. The wine's structure, extraordinary length and uncompromisingly dry style make it a sparkling wine with a clear gastronomic focus. At the same time, Cuvée Céleste is the iconic wine of Karanika Estate, encapsulating Laurens Hartman's decades of knowledge and expertise in crafting world-class sparkling Xinomavro.
