The next “step up” in the series of the winery’s exceptional Sauvignon Blancs comes from a vineyard planted on classic Kimmeridgian soils, taking its name from the marine fossils found there—remnants of a seabed from millions of years ago. “Les Fossiles Blanc” is crystalline, vibrant, and mineral, with enviable precision on the palate. Its sharp acidity energetically stimulates the palate, much like the great neighboring Sancerre and Pouilly-Fumé wines. Here, organic and biodynamic cultivation, combined with fermentation using native yeasts, adds another level of complexity, creating a wine that expresses the terroir more than simply the fruity character of the variety.

It will not remind anyone of Marlborough Sauvignon Blanc. Green notes are in the background, while intense lemon aromas and fruits such as green apple and grapefruit come forward, providing freshness combined with a very chalky, mineral character. With its acidity levels, it feels bone-dry, very refreshing, relatively light, and fresh—key hallmarks of Loire wines’ beauty. It lacks the pronounced aromatic intensity of New Zealand wines with their overtly expressive fruit. Here, there is more calm, harmony, and subtlety in style, appealing to lovers of minerality in wine.
