From a 70+ year-old organic, own-rooted vineyard in the Tremithousa area of Paphos, planted at high altitude on poor soils. Exceptionally low yields result in remarkable fruit concentration and impressive length on the palate. Fermentation occurs spontaneously in stainless steel tanks, followed by maturation without oak on Xynisteri lees. This technique enhances texture and mouthfeel while preserving the purity and typicity of the variety. The result is a Maratheftiko of outstanding fruit clarity, vibrant acidity, fine-grained tannins, and a vivid expression of Cyprus’ mountainous terroir. The decision to forgo oak further emphasizes the grape’s primary fruit character and highlights its potential in a thoroughly modern, gastronomic, and fruit-forward style.
The wines born from Vouni Panayia Winery’s long-running series of micro-vinifications are the result of a continuous quest to better understand the potential of Cyprus’ indigenous grape varieties—even by the winery itself. Rebel is a revolutionary interpretation of the Cypriot Maratheftiko variety. It follows a different path, aiming to strip the grape of any unnecessary intervention and reveal its most captivating qualities. Unexpectedly expressive and highly appealing, it offers vibrant aromas of cherry and sour cherry, accompanied by notes of bay leaf, mint, and Mediterranean herbs. A subtle floral and carbonic dimension adds tension, freshness, and lift. On the palate, the wine is juicy and full of energy, with lively acidity and beautifully fine-grained tannins—an uncommon trait in Cypriot wines, which often display a more rustic or assertive tannic profile. This is a wonderful expression of Maratheftiko, showcasing an exciting barrel-free side of the variety.
