Vidiano is undoubtedly the flagship of the Cretan vineyardrenaissance. A variety with many faces and dynamic expression, which in the Garakis family's rendition acquires a mineral, austere, and lively profile, perhaps a little further removed from the exuberant, creamy versions of the variety. Here, the fruit is ripe but restrained, with a subtle lemony acidity and hints of bread and yeast, the result of contact with the lees. The barrel (only 20%) does not “shout,” allowing the wine to freely express its freshness and structure while increasing its complexity. A terroir-driven Vidiano, from four small vineyards around the village, all planted on poor limestone soils, which give it energy, vertical acidity, and pure expression. A Vidiano that looks ahead and clearly reflects the character of the region.
The Garakis family's Vidiano comes from four organically cultivated vineyards, all locatednear the village and planted in poor, limestone soils. The process begins with 24 hours of skin contact at low temperature, before alcoholic fermentation begins, which lasts about 15 days under controlled conditions. The wine remains in contact with the fine lees for about 5 months, with frequent stirring (batonnage), while 20% of the volume is aged for 2 months in second-use oak barrels to enhance complexity without overshadowing the varietal profile. The end result is a balanced and authentic Vidiano, combining freshness, finesse, and structure, free from excessive intervention. Try it with Cretan cheeses such as anthotyros or manouri, or dishes with light creamy sauces.
