Clef de Sol is Damien and Coralie's first dry wine to bebottled from the Montlouis sur Loire appellation of origin. The second (Les Epineys) always comes to market after an additional year, having been further matured in a number of different containers. Clef de Sol is bottled immediately after the end of spontaneous alcoholic fermentation, a slow fermentation that starts in autumn, slows down in winter and continues in spring until it is complete. The wine thus remains for about 9 months in contact with 225 and 400 litre barrels in which it ferments and at the end of the fermentation process it is bottled fresh without further ageing. Beautiful, expressive with notes of fresh fruit and white flowers and that "line" of minerality that runs through the wine from start to finish and gives it fantastic energy and vitality.
The grapes come from various vineyards in Montlouis, some of them from Les Epineys, aged between 30 and 80 years old and the harvest is always done by hand. The grapes are pressed with the whole bunches, then de-stemmed for 24 hours naturally and the juice is transferred to the barrels (225 and 400 litres) where it will ferment with the indigenous yeasts. The wine is bottled directly from the barrels after the fermentation is completed with a very gentle filtration and minimal sulphites. An excellent Chenin of minimal intervention from the most "restless" and up-and-coming Loire appellation of origin for the variety.
