Xinomavro from the old, ungrafted vineyards of Amyntaio meets the intensity and precision of Assyrtiko in an exceptionally ambitious cuvée, which stands as one of Laurens Hartman’s finest expressions. The grapes, harvested at different stages of ripeness, the spontaneous fermentation, and the vinification of Asyrtiko in barrels of varying sizes (barriques and large foudres) form the foundation for a wine of great complexity. Prolonged aging in the bottle (48–90 months) enhances the structure and depth, creating a multi-layered and intensely expressive whole. The aromatic profile unfolds with notes of caramelized apple, honey, toasted almond, and freshly baked bread crust, framed by a subtle minerality reminiscent of wet stone. On the palate, the rich and creamy texture balances perfectly with the lively acidity, while the exceptionally fine and persistent effervescence lends energy and finesse. Complete, deep, and utterly distinctive, this sparkling wine confirms Amyntaio as one of the most exciting terroirs for sparkling wines.

On the one hand, the structure and body of Xinomavro, and on the other, the liveliness and refined character of Asyrtiko, come together to create a unique blend that makes the classic Campania combination of Pinot Noir and Chardonnay seem almost predictable. With a philosophy of minimal intervention, extremely low sulfur levels, and prolonged contact with the lees during malolactic fermentation, the wine clearly highlights the potential of Amyntaio. On the nose, it exhibits a subtly oxidative character, where toasted and slightly smoky notes coexist with hints of yeast and ripe fruit. On the palate, the creamy texture balances perfectly with the refreshing acidity, while the exceptional quality of the effervescence lends energy, finesse, and length. In contrast to the estate’s Extra Cuvée de Réserve, which emphasizes intensity and its “energetic” dimension, the Prestige Cuvée expresses more maturity, depth, and flavor richness. On the food pairing front, it is an ideal match for fatty grilled fish, though it is by no means limited to that.
