Nicola Bourget's approach to the classic Aegean blend of Mandilaria and Waftra is that of a glou-glou wine. Given the stubborn and tannic character of Mandilaria, this particular vinification, which emphasizes the fruit rather than the structure of the wine, is an excellent idea for "taming" the grape. The combination of whole bunches and crushed fruit (in a kind of "millefeuille", layer by layer) helps to express the fruit and gives a beautiful spicyness to the wine. Think aromas and flavours of crisp red fruit, light body, freshness and light tannins for the variety, nothing like the monolithic tannic character of Mandilaria. Enjoyable, mild natural vinification, a wine that you want to refresh and drink in quantity.

The grapes are organically grown (without certification) and come mainly from the mountainous area of Thapsani in the centre of the island. The "Nees Rizes" are not so new since they come from a combination of vineyards, the oldest of which in cups and traditional "aplotaria" are 150 years old. The vinification is entirely non-intrusive, with spontaneous fermentations, and in any case the sulphites do not exceed 40mg/l, as is the case with all Nicola wines. 2/3 of the wine is matured in stainless steel tanks while 1/3 will remain for 8 months in old oak barrels.
