A wine that aims to bring memories of tradition to the forefront and truly embodies Jerome Binda’s effort to preserve the island’s heritage and long winemaking history. Just as in every family, the grandfather is the one who ensures that traditions are passed down to his grandchildren, so too does Binda’s Pappous uphold the tradition of blending white and red varieties from field-blend vineyards. Wines whose color was somewhere between light red and deep rosé, which the old winegrowers kept in barrels until they opened them at Easter to drink at the table with the spit-roasted lamb. A wonderfully rustic character, a hint of age, and a wine that captures the island’s winemaking past like nothing else.

White Potamisi and Rozaki, blended with 20% of the red Mavro Potamisi, are harvested simultaneously from the vineyard, co-fermented, and left in contact with the lees for one year. Pappous, like all Domaine de Kalathas wines, is bottled without the addition of sulfites. Mineral notes, Mediterranean herbs, and oxidative notes—more spicy than fruit-forward—offer a fascinating glimpse into a distinct style of wine that draws from the past yet avoids its shortcomings.
