A vineyard with enormous sentimental value for Damien and Coralie Deleceneau, a historic field-blend piece that hides varieties such as Côt (Malbec), Grolleau, Pineau d'Aunis and various other reds and whites, often forgotten over the years. A piece of land that tells a lot about the history of the region, without Cabernet Franc and Sauvignon Blanc that now dominate, since these varieties came later from the east and west of Touraine to "work" the styles of wines like Sancerre or Chinon. In some "magical" way the ripening of the biodynamically grown grapes are synchronized and the harvest is simultaneous. Rosa Rosé Rosam is a Pet-Nat rosé sparkling wine, with fermentation completed in the bottle where the natural sparkle is created for this delightful wine that is great to drink as an aperitif or with red fruit.

The region is considered the "heart" of France's pet-nat wines, the oldest method of sparkling wine production in the world. Damien and Coralie "fell in love" with this style and have been producing this stunning rosé sparkler, with only the one fermentation, for over a decade. The pet-nat trend is significant, a return to the roots often associated with the natural winemaking movement. The style is "sweeping" but these are often wines full of "craziness", funky character and specificity. Rosa Rosé Rosam follows the philosophy of minimal intervention, with indigenous yeasts and no additions beyond minimal sulfites, but at the same time has an extremely pure and enjoyable character. It is classified as a Vin de France, like most of these wines. The grapes are taken directly to the press whole, the "colored" juice will be left for 24-48 hours in tank to clarify and then transferred to another tank to begin fermentation with native yeasts. Before fermentation is complete, the wine will be transferred to bottles where the fermentation will be completed creating in-bottle foaming. Exciting, easy drinking, with beautiful energy in the mouth, for Damien and Coralie it is the ideal wine for the beach or moments of total relaxation.
