The "pampered" for Damien and Coralie, Côt (Malbec), which here in the Loire is a far cry from the bombs of fruit and tannins found in southwestern France, joins the red Clef de Sol, with Cabernet Franc, always from two specific pieces of land that are adjacent to each other. The two varieties get along extremely well, giving all their unique characteristics to the blend. The Cot takes the lead with its dark fruit, floral and spicy character, while the Cabernet Franc gives herbal and botanical notes along with its earthy - reminiscent of wet leaves - character. The wine's tannins are fantastic, building gradually and lasting, but at the same time they are superbly integrated with the other characteristics and the wine seems capable of ageing with its wonderful structure for over 10 years.

Peppery, structured, with robust tannins, the "Key of Sol" is another stunning wine with reference to Damien and Coralie's musical roots, always the start of a musical piece, but also the first wine made by the winery, their own start. A blend of 60% Côt and 40% Cabernet Franc which are vinified separately in concrete tanks. The harvest for Côt from the winery's biodynamic vineyards precedes the Cabernet Franc and the wines are aged in old oak barrels for 8-10 months. The approach to winemaking is completely natural and all that is added is a little sulphite in the wine. If you open it, prefer to pair it with food, such as a braised braised casserole.
