Pecorino is grown biodynamically and organically in Orsogna’s certified vineyards, at an elevation of 440 meters and equidistant from the Adriatic Sea and the Majella mountain range. The grape variety, known for its ability to retain high natural acidity even in advanced stages of ripening, produces wines with intense concentration, minerality, and structure. The grapes are harvested by hand, and vinification relies on spontaneous fermentation with indigenous yeasts. This is followed by brief aging in concrete tanks and in the bottle, with natural tartaric stabilization and minimal addition of sulfites in accordance with Demeter certification standards. No sterile filtration is used, allowing the wine to retain the authentic expression of the grape variety and the terroir.

Pecorino is one of the most fascinating stories of revival in the Italian vineyard. An almost forgotten variety from the Apennines, which nearly disappeared during the 20th century due to its low and inconsistent yields, has made a strong comeback thanks to its unique character. Its name is linked to the shepherds of Central Italy (pecora means “sheep” in Italian) and the flocks of sheep that crossed the mountain passes, drawn by the variety’s sweet, golden-yellow grapes. In the hills of Orsogna, between the Adriatic Sea and the Majella Mountains, Cantina Orsogna cultivates Pecorino biodynamically, highlighting its natural intensity and distinctive character. The result is a wine with aromas of white-fleshed fruits, flowers, citrus, and Mediterranean herbs. On the palate, it combines richness and vibrancy, with lively acidity, pronounced minerality, and a characteristic salty finish. A white wine with depth, energy, and gastronomic character, proving why Pecorino is now considered one of Central Italy’s most exciting grape varieties.
