Amarone are dry wines made from Corvina and other similar indigenous grape varieties that have been dried with extreme care for months before alcoholic fermentation. The purpose of the whole process is to boost tensions, aromas and flavours. The style of Amarone is naturally exuberant and rich. You could say it has a distinctly "baroque" mood. Yet La Stropa from the Monte dall'Ora winery has no trace of excess in its characteristics. It is the middle path of the search between the freshness and the innate richness of a classic Amarone. More spicy and nervy than juicy and sweet, this is a layered Amarone with an unsurpassed balance of power and elegance.
For La Stropa the grape drying process is masterful, full of detail and without theuse of technology. Strictly selected and healthy grapes are left for about 3 months in small wooden crates which are placed on top of each other in a well-ventilated and cool environment on the roof of the winery. From there on, fermentation in oak tanks is spontaneous and the wine will be matured in large barrels (botti) for three years and left for at least another two and a half years in bottle. The fruit concentration is exemplary, Corvina's classic dark flowers are mixed with notes of liquorice and raisin along with fruit cake and chocolate. The palate has volume and dense tannins but the acidity is mouthwatering, restoring balance. Concentration and restrained power with breaths of freshness in an exemplary style of great wine.
