Aoton Savvatiano remains one of the most daring and authentic expressions of the variety, yet the 2025 vintage reveals a different, more elegant and light-footed side of it. The same philosophy of minimal intervention and native yeasts results in a wine that retains its identity intact, but this time with a greater emphasis on freshness, precision, and purity of expression—characteristics that this particular vintage brought out perfectly. The moderate golden color, the result of prolonged contact with the skins and aging on the lees, hints at a nose of ripe stone fruit, citrus peel, and subtle notes of nuts and toasted bread. On the palate, it displays a more subtle oxidative character, lower alcohol sensation, and remarkable freshness. A personal interpretation by Savvatiou that demonstrates just how far this variety can go when it breaks away from conventional winemaking practices.
Aoton Savvatiano represents one of the most unique winemaking approaches found in Greece today. Spontaneous alcoholic and malolactic fermentation, approximately ten days of maceration on the skins, fifteen months on the fine lees with regular batonnage, and bottling with minimal sulfur remain constant elements of the winery’s philosophy. The 2025 vintage, however, offers a different interpretation of this style, with greater emphasis on finesse, precision, and clarity of expression rather than power. Its aromatic complexity continues to be based on the interplay between primary, autolytic, and tertiary aromas, yet the overall impression is lighter, more elegant, and exceptionally food-friendly. A Savatiano that successfully challenges the stereotypes surrounding the variety.
