"Koumna" is produced exclusively from the red Cypriot variety Mavro, which has the most plantings in the Cypriot vineyard. It comes from old vineyards in the region and the fermentation is spontaneous and then the wine is matured in 220lt pithouses (Koumna means pithouses in the local dialect). While it is a productive grape with high yields, in the mountainous terroirs and from the old vines it comes from it shows much more "noble" characteristics. The experimentation of maturation in ceramic amphorae helps to achieve an ideal balance between the tannins and the primary fruit of the wine. Often barrel ageing does not have good results because the Mavro shows "green" characters due to vineyard yields and the barrel covers the fruit and makes the tannins seem even more "empty" and astringent. But "Koumna" is a real revelation of the potential of the variety and what it can do in an excellent terroir and with a different approach to winemaking.

The micro-vinifications express this need of the Kyriakides family to examine the quality potential of Cypriot varieties. Having vinified Mavro in many different versions, Koumna gives a different qualitative dimension to the grape. Excellent concentration, balance of tannins and fruit, good levels of freshness and a "lift-off" of the most planted Cypriot variety. Koumna is the "essence" of the experimental vinifications, redefining the potential of the variety.
