Chateau Chalon is not an estate but an entire appellation in the Jura region dedicated exclusively to Savagnin and the sensational "yellow wines" (also known as Vin Jaune). For six years and three months, the wines are hardened—commonly known as aged—under a thin veil of yeast that develops in partially filled old barrels, giving the world one of the rarest, complex, distinctive wines in terms of taste and aroma. The oxidation that occurs during the aging process is catalytic and leads to penetrating and highly complex aromas with very intense notes of dried fruit, spices, earth, and saltiness. Stephane Tissot's Chateau Chalon comes from a vineyard in the northern part of the zone on clay soils and is reminiscent of old Fino Sherry but with dramatically increased levels of complexity.

Penetrating tensions with beautiful oxidation supported by notes of citrus peel and candied lemon. Give it time to open up and it will throw a party of aromas with saffron and curry, tobacco leaves, nuts such as walnuts and roasted almonds, and earthy notes of truffle. Full of umami on the palate, minerality reminiscent of peat and shellfish, intense aromas of nuts and an almost salty, intensely spicy aftertaste that lingers unforgettably. A magnificent yellow wine from Tissot and the most renowned appellation of origin in Jura for this particular style. Explosively powerful yet elegant at the same time. The 62cl bottle in which all Vin Jaune wines must be bottled is called a clavelin and represents the percentage remaining from a liter of wine after evaporation over the years in the barrel. The percentage of wine lost is estimated at approximately 40% of the original.
