The privately owned vines on the plateau from the village of Gabouillon, from which the wine borrows its name, are located high above the river, on a gentle north-facing slope just beyond the family vineyards within the Saint-Joseph appellation of origin. The soils here are also similar to the Saint-Joseph soils, mostly decomposed granite, and the vines are also old in age. Philippe Desbos' traditional winemaking approach means that the grapes are crushed with the feet, fermentation is spontaneous in open oak fermenters and maturation takes place in a combination of tanks and old barrels for just 7 months. Fresh, crisp fruit, white pepper and a deliciously fresh and juicy mouthfeel, which although lighter and without heavy structure is the definition of drinkability.

Outside of Saint-Joseph appellation of origin, although in similar soils, and in a cooler mesoclimate due to altitude and orientation, Domaine de Gouye's Gabouillon Syrah is lighter in alcohol and structure, but bursting with flavour. Peppery elements, fresh fruit, acidity and freshness that one can only find in this part of France when it comes to Syrah. Direct, expressive, for immediate drinking.
