Two different terroirs: one inland, and one by the sea. But here we are not talking about the terroir of grapes, but the terroir of resin. After pioneering the use of sustainably harvested resin without chemicals, the next step for 1979Wines was to research how the origin of the resin can affect the aroma and character of the wine. And the differences are striking. Based on Assyrtiko from the privately owned vineyard in Goumenissa and using identical winemaking techniques, the only variable is the origin of the resin. Thus, Eleni Kechri continues her research, revealing new dimensions of retsina. Kallos Thalassino is a wonderful Assyrtiko, with notes reminiscent of sea salt and subtle herbal hints of mint — elegant, ethereal, almost like a sea breeze. Strikingly different from the more classic, dense, and mature Stergiano, Thalassino comes from resin collected sustainably from pine trees near the sea, in the Elati area of Chalkidiki, on the first foot.
