Among the white and red Burgundies he produces, seeking out old vineyards, Jérôme Galeyrand has emerged as a true “virtuoso” of Aligoté, constantly enriching his collection with increasingly expressive expressions of the variety. The Bourgogne Aligoté Blanche is a new, particularly successful addition, hailing from the Pommard region and an old vineyard planted in the 1960s, with a north-facing orientation and soils of broken limestone. This is an Aligoté with a bold character, aimed at lovers of “crisp” whites: grapefruit, citrus zest, and pear are framed by intense, stony minerality. A wine with a clean profile, precision, and a strong sense of place.

Due to the cool climate of the vineyard, Galeyrand aims for the latest possible harvest in order to achieve greater phenolic ripeness while maintaining the intensity of the acidity. The vineyard is cultivated organically (uncertified), and no sulfites are added during vinification. The grapes are pressed in a vertical wooden press, and fermentation takes place with indigenous yeasts. This is followed by 12 months of aging in barrels (approximately 20% new) and an additional 2 months in a stainless steel tank. The wine is bottled without fining, with gentle filtration only if deemed necessary, and with a small addition of sulfites in the final stage. In the glass, it clearly expresses the character of the variety: crisp, “green” fruit, intense minerality, high acidity and energy, with a strict yet perfectly balanced profile.
