Syrah was the first variety planted by Michalis Tsafarakis in his small family vineyard in Apokoronas, Chania, in 2002. The vineyard is cultivated using organic practices, though not certified, with particular care given to the vines. Krostandi is a lively, unpretentious expression of the variety: a Syrah with no barrel contact, emphasizing the pure varietal fruit. Aromas of red fruit with spicy notes combine with moderate alcohol and a refreshing character. On the palate, it is light to medium-bodied, with a soft tannic structure and intense freshness; ideal served slightly chilled, highlighting its energy and liveliness rather than its power and concentration.

The Syrah vines, which are over 20 years old, yield low yields per acre and are cultivated using meticulous organic practices. Fermentation takes place with native yeasts, while maceration is particularly brief, contributing to the wine’s lighter, juicier, and more direct character. There is no barrel aging, preserving the purity of the fruit. The result is a Syrah emphasizing freshness, crisp red fruit, and lively acidity, with a soft structure and easy-drinking character.
