Evriviadis Sklavos' more heretical, natural “look” at the Zakynthino variety is a real revelation that broadens the taste horizons and enhances the concept of diversity. Zakynthino comes from three biodynamically cultivated vineyards on the plateau of Elios, where the Aenos River ends and reaches the southwestern part of the island, and is produced, like all Sklavos wines, with gentle natural vinification. An excellent example of the producer's style, it achieves a delicate balance between creamy rich texture and intense minerality, leading to a warm, dry and crisp - extremely mildly oxidative - note and aromas of ripe apricots and peaches. Zakynthino is the ultimate antidote to uniformity and to a perspective that wants -a priori- all wines today to offer crystal clarity, fresh aromas and lemony fruit.

Mild vinification involves spontaneous fermentation in stainless steel tanks with native yeasts and leaving the fermented wine in contact with the fine lees for 7 months. As the name of the variety suggests, Zakynthino travelled years ago from Zakynthos - where it is known as Pavlos - to Kefalonia. This is where the similarities end, as both in terms of the wine and the taste profile, the wines from the two islands are extremely different. The high acidity cuts like a knife through the creamy, honeyed, sensation of the wine and leads to a long tasting aftertaste. Another special wine with depth and soul from Evriviadis Slavos.
