Melissaki, whose name derives from its honeyed aromas, was rescued from the slopes of Psiloritis and is cultivated in the Geroditis vineyard of the estate at an altitude of 480m. Vinification takes place in contact with the skins for one month in 400-liter first and second-use barrels and with yeasts isolated from this particular vineyard. The wine is not clarified, filtered, or bottled without the addition of sulfites. A small sip is enough to release the life and power hidden within it. Honey flavored with orange peels and peppery notes are concentrated on the palate, where the tannins are present to the extent that they help refresh and balance the fruit. The aftertaste of this unique wine is deliciously spicy and long-lasting. Be sure to enjoy it at a higher temperature than your usual white wines, allowing it to breathe.
