In sandy soils between Naoussa and Parikia, Assyrtiko is cultivated very close to sea level and without any particular water stress produces through the gentle natural vinification of Nicola Bourget one of the most distinctive Assyrtiko of the Greek islands. The fruit is ripe and the wine has controlled oxidation while the palate is full-bodied with the typical power of Assyrtiko, mineral characters reminiscent of teal and stone and a slight phenolic dimension towards the finish. Ammos is a naturally vinified Assyrtiko that still has a lot of time ahead of it and is a beautiful, ripe, approach to the most noble grape of the Cyclades.

Nicolas Bourget tries to render the terroir of Paros without intermediate interventions and winemaking fioritures. His approach is as simple as possible. Native yeasts take over to "run" the alcoholic fermentation, after directly pressing the whole bunches of Assyrtiko, and the whole process takes place in stainless steel tanks where the wine remains in contact with the lees for a few months before being bottled with very low sulphites.
