For those with more than a passing interest in the Bordeaux region, Château Falfas is not just located on a beautiful terroir, just 1 km from the Gironde estuary. Since 1988, Véronique Cochran has been biodynamically cultivating the estate’s 20 hectares of vineyards, following in the footsteps of her father, François Bouchet, who served as a biodynamic consultant for estates such as DRC, Domaine Leflaive, Domaine Huet, and many others. Château Falfas produces a fantastic Bordeaux fermented with native yeasts, composed of 55% Merlot, 30% Cabernet Sauvignon, 10% Cabernet Franc, and 5% Malbec. The wine matures half in oak barrels for 12 months (25–35% new) and the other half in concrete vats. It is wonderful and approachable, with a soft texture, fine tannins, and a lively, fresh acidity—a wine that perfectly expresses the 2016 vintage. If you are looking for something for the back of your cellar, turn to the estate’s “Le Chevalier.” While Château Falfas certainly has the potential to age a decade, it represents the style of Bordeaux that enthusiasts can enjoy any day of the week, without having to wait.
