A unique crescendo of the three iconic Touraine varieties, Côt, Gamay and Cabernet Franc, in a blend that symbolizes, like the name of the wine, freedom of expression. Ad Libitum is that musical term that often indicates the musician's freedom to improvise, to step out of tempo and rhythm a little, to work spontaneously and outside the notes and to do things that please him or her. "Ad Libitum" is a wine of absolute pleasure, that style of "vin de soif", everyday wines that can be enjoyed over and over again on many different occasions. Smooth and elegant in tannins, with short extractions, relatively light-bodied, full of liveliness and surprising tensions, with ripe red fruits and a soft earthy dimension. You will fully enjoy it after cooling it slightly in the fridge, placing your favourite cold cuts next to it.

Almost all of the estate's red vineyards are located around the cellar in the famous Amboise and for "Ad Libitum" the three typical varieties are picked in succession, first Gamay, then Côt and finally Cabernet Franc from the estate's biodynamic vineyards. The grapes are vinified separately with short macerations and after pressing (before fermentation is complete) the free-flow juice and the pressed juice are mixed to complete fermentation in the stainless steel tanks. After malolactic, the three varieties are blended and the wine is released in March after harvest, fresh, lively, crisp and immediately enjoyable. The barrel is completely absent, yet the wine will evolve beautifully for 4-6 years.
