7 Fuentes comes from a number of small vineyard plots in the Orotava Valley, combining young vines with exceptionally old ones, some up to 180 years old. These small properties, often scattered even in the backyards of homes, are known as suertes and form the basis of the blend, through collaborations with local winegrowers. The blend features the local Listán Negro variety, with a small percentage of Castellana Negra, giving the wine an intense fruity and peppery character. Early harvesting preserves the natural acidity, while gentle pressing, the use of indigenous yeasts, and low sulfur levels enhance the purity of expression. Aging takes place in concrete tanks and old 500-liter barrels, offering a balance between freshness and structure.
