Not all wines from the Jura are a wild, uncertain journey into a world that, until recently, remained largely unknown and isolated from the wider wine scene. Tissot’s DD is, naturally, an unconventional wine. It challenges the old notion that depth of colour is synonymous with quality, showing instead how a lighter, fruit-driven red can be utterly captivating. The blend of three red varieties — 40% Trousseau, 25% Poulsard and 35% Pinot Noir — reveals ripe red fruit, notes of celery, aromatic herbal nuances and spices with an Asian-inspired finish. A short period of ageing in foudres and demi-muids gives the wine creamy, rounded tannins while keeping the fruit focused and preserving its wonderful energy on the palate. The result is a playful wine, brimming with character, balance and vitality.
DD is a tribute to André Tissot, Stéphane’s father, affectionately known as “DD”, and reflects a traditional Jura winemaking style. The Pinot Noir is harvested as whole bunches and undergoes a three-week semi-carbonic maceration in conical wooden vats, while the Poulsard (25%) and Trousseau (40%) are hand-destemmed and allowed to ferment spontaneously. The wine is aged for three months in a combination of foudres and 600-litre demi-muids, before being bottled with minimal sulphur. On the nose, it reveals notes of violets, aromatic spices and fresh herbal nuances. The palate offers vibrant red fruit, delicate savoury and animal notes, with hints of fresh almond on the finish. It is best enjoyed slightly chilled, highlighting its fresh, immediate and lively character.
