Les Vignes de Chavignol comes from vines that are approximately 60 years old, grown in clay-limestone soils with Kimmeridgian marl, which lend the wine structure and minerality. The harvest is done by hand, and vinification takes place with whole clusters and indigenous yeasts, enhancing the complexity and authentic expression of the terroir. Aging lasts a total of 18 months (12 in oak barrels and 6 in stainless steel tanks), lending airiness to the fruit and structure to the wine. Aromatically, it is characterized by black berries, subtle spices, and some animal notes. On the palate, it stands out for its harmony and the finesse of its tannins. A superb Pinot that will continue to evolve for at least a decade and definitely needs to be aerated to bring out its fruit.
