Butteaux 1er cru is a true masterpiece of Thomas Pico, one of the top expressions of the Chardonnay variety. It is located within the premier cru of Montmains, on the left bank of the Chablis with vines of southeast exposure and 300m altitude, in the fossil-rich soils of the region. The old vineyards but also Pico's obsession with the vine, organic farming, the absence of intervention and natural vinification, result in a Chablis that is surprisingly ripe, but with the characteristic "kick" given by the mineral side of the wine, reminiscent of something between gunpowder and chacchia. A wine of great purity that carries all the essence of the great terroir from which it comes.

Stylish and extremely complex on the nose, notes of ripe lemon and citrus jam, freshness of mint and pompous mineral character along with tobacco. On the palate there is the classic - a la Chablis - rigour but with dense texture and depth of fruit, in a yin-yang type of interconnection that leads to perfect balance. The tensions on the palate testify to the noble origin of the wine from the top Butteaux vineyard and lead to an impressively fresh and mineral finish with a very long finish. Alcoholic fermentation and malolactic fermentation took place in oak tanks while it matured with delicate lees without batonnage. It was bottled after 34 months unfiltered and with minimal sulphites. It will evolve slowly and beautifully over a decade in bottle highlighting its great class.
