We know of no other Greek terroir that is as exciting as Aegialia, both in terms of rare Greek varieties and international ones. Planted at an altitude of 810 meters, with northern exposure and a cool climate, Chardonnay Nature expresses its terroir in a unique way. The purity of the fruit and the elegance of the wine's character are related to this exceptional vineyard, which leaves its mark on all the wines. Aromas of lemon leaves, pear, and apricot combine with a minerality reminiscent of chalk, while the short stay with the fine lees and part of the wine in oak barrels adds texture and volume, perfectly balancing the lively acidity. A refined, lively, and balanced Chardonnay, one of the contemporary examples that highlight the character of the variety and the unique terroir of Aegialia.

Chardonnay Nature comes from a 4-acre organic, non-irrigated vineyard with northern exposure, at an altitude of 810 meters in the mountainous region of Aegialia. The vinification follows a classic white approach, using only free-run juice and minimal intervention. Alcoholic fermentation takes place with indigenous yeasts at 16–18 °C  and is followed by spontaneous malolactic conversion. The wine is partially aged for three months in stainless steel tanks and in 600-liter oak demi-muids (barrels). The wine is aged for three months on fine lees in stainless steel tanks and partly in 600-liter oak demi-muids. It is bottled unfiltered and unclarified, with low sulphite addition. Its lemony character and creamy texture with lively acidity make it an ideal accompaniment to a parmesan risotto with freshly ground pepper. Simple, tasty, and perfect alongside it.
