The rebirth of Mavrodaphne comes through the new dry expressions of the variety, and Tetramythos' Laurier Noir Nature is an amazing "voice" of its potential. At 915 meters on the slopes of mountainous Aegialia, a small, northern, and cool single-vineyard vineyard on rocky soils with clay and limestone produces concentrated grapes, full of vitality and natural acidity. In the glass, dark fruits, violets, licorice, and spices combine with notes of leather and dark chocolate. On the palate, the wine is structured and refined, while the tannins, present but soft, highlight its balance. The reds of Aegialia stand out for their energy and elegant structure, and Laurier Noir Nature is a Mavrodaphne that demonstrates the potential of the variety beyond the classic sweet wines with which we have paired it.

At an altitude of 915 meters, with northern exposure and significant day-night temperature differences, Laurier Noir's small Mavrodaphne vineyard produces concentrated grapes, with low yields per hectare and fruit full of intensity. The vines are around 20 years old and benefit from the cool mesoclimate and clay-limestone soils. The vinification is completely natural: spontaneous alcoholic fermentation, 2 weeks of maceration at 22°C, natural malolactic conversion, and 12 months of aging in 15 hl French foudres. The wine is bottled unfiltered, without fining, with low sulphite addition. Ideal with pan-fried tuna fillet, or even more classically with slow-cooked lamb with garlic, thyme and potatoes.
