While neighbouring Languedoc may have flirted with international grapes, living the dream of regions like Bordeaux or the Rhône, Roussillon has followed a more traditional path. Pioneers such as Gauby relied mainly on excellent, old goblets with local varieties that respond to the region's arid climate extremely well, giving wines that speak of acidity and minerality. Calcinaires Blanc, for example, takes its name from the limestone soils around the hamlet of Calce. The blend of Macabeu, Chardonnay, Grenache Blanc and Vermentino has crisp acidity, salty mineral notes and a hint of delicious ripe peach. Gerard's closing his ears to the sirens proved conclusively that the best varietals are those of the South as long as you live and work in the South.

At a time when the house was betting on the bigger, richer wines in terms of barrel and maturity, Gauby worked against the grain. In a hot region where over-ripeness can often be achieved in a flash he found the trick in biodynamic farming and shading the vineyards. Large trees spread their shade through the vines, protecting the old cups from the hot Mediterranean sun. Biodynamics in turn has managed to bring the ripeness earlier. Calcinaires is produced in stainless steel tanks and matured for seven months in a combination of old large oak and stainless steel tanks with gentle natural vinification, spontaneous fermentation and minimal sulphites in bottling. It's full of ripe stone fruit, field flowers and wild dried herbs. The palate is round but not flabby with cool alcohol and acidity framed by fine minerality and a dry, crisp finish.
