Odyssey, a 100% Thrapsathiri, is a precursor to a style of winemaking that comes from the island's wine past. It is a white, intensely oxidative wine, with a deep golden colour and tertiary aromatic characters of honey, wax, old wood, dried herbs and intense dry fruit elements. The flavour of the wine gradually peaks, reaching levels of intensity and complexity not often found in white wines. Absolutely gastronomic, a wine that exemplifies Economou's winemaking genius.

    The play that Economou is making with oxygen is amazing. The wine artfully straddles oxidation, which has taken it to unique limits of complexity. The barrel is beautifully digested giving sweetness to the aromas, accompanied by nuts, memories of earthy notes and honey. Complexity, tensions, length in the mouth hit the red. The flavors in the mouth build hour by hour leading the wine to an almost endless finish. Memorable, distinctive, a wine that permeates your entire being.
