Only animals can help with the farming, which is done strictly by hand. The vines grow freely, without any support over cliffs. For those with acrophobia the sight is forbidding, for the rest it is a secret paradise where the vines are rejuvenated by the altitude, the saltiness of the ocean and the lively chirping of the endemic birds. At the winery, Taganan Blanco is produced naturally and without intervention. Its blend is local Tenerife varieties such as Listan Blanco, Albillo Criollo, Marmajuelo, Gual, and Malvasia. Fermentations are spontaneous and individual per vineyard with a percentage of the wine making skin contact for days. It is aged for 8 months on lees in a combination of stainless steel tanks and neutral oak barrels. Refreshing like being sprayed by the sea with droplets full of saltiness and fruit like baked apple and white peach. Tangy bite, oyster-like minerality and a long salty finish.
