Perhaps one of the most daring, but totally successful, expressions of the Savvatiano variety, in an approach that explores to the extreme the fantastic potential of the grape of the Attica vineyard. The wine is distinguished by its medium golden colour, due to both contact with the skins and the aging of the wine, while the nose is overwhelming with honeyed apricots, orange peel, tangerine crumbs and toasted nuts and toasted bread. Ripe, with flavourful depth and power in the mouth, exotically spicy character but also immense freshness. Maceration and balance in a wine that says a lot with its specificity. A Savatiano with indigenous yeasts and a philosophy of minimal intervention.

A different approach to the Savvatiano variety characterized by maturity, complexity, tasty tensions and the interplay between primary, secondary (from the lees) and tertiary (ageing) aromas. Even if one is not a fanatic of the style, Aoton Savatiano is a wine with a completely unique character and gives an extra dimension to the variety and complexity of the wines it can provide. The wine will stay with the lees for up to 15 days during alcoholic fermentation, malolactic is spontaneous and the wine will stay in contact with the lees for about 10 months and the batonnage process. It will be bottled with minimal sulphites and will be released to the market after an extra period of bottle ageing.
