Quintaine is the historic cuvée of the small Guillemot-Michel estate and, until 2014, was the only wine they produced. It comes from 6 hectares of old vines, with an average age of 60 years, which are cultivated organically and biodynamically. For those who don't know, the tiny appellation of origin Viré-Clessé, part of which is the village of Quintaine, is one of the best areas for Chardonnay in the Macon region, in the southern part of Burgundy. The Guillemot wine is produced with a philosophy of minimal intervention and is an excellent example of the family's philosophy. A benchmark for the style of the region, rich and exotic but with acidity that "runs" across the palate , giving energy and a wonderfully lemony freshness in the mouth.
Fantastic attention to detail, low yields, and a healthy biodynamic vineyard explain the high quality of Quintaine. The grapes arrive at the winery ripe and healthy, and from then on, the Guillemots simply monitor without interfering in the winemaking process. Fermentation of whole bunches with natural yeasts, maturation in concrete tanks with the lees, but without batonnage, result in a rich but not heavy wine, with energy and freshness on the palate that give it exceptional fruit longevity. Beautifully ripe, but with supportive acidity, it is extremely balanced and complete. It will age slowly in the bottle, developing a wonderfully mellow character with notes of honeycomb. Smooth and soft, like traveling on a magic carpet.
