Karanika Cuvée Rosé Extra Brut is made from 98% Xinomavro and 2% Limniona, organically grown in vineyards in Amyntaio at an altitude of approximately 650 meters. The pre-phylloxera vines of Xinomavro are located in the sub-zones of Sioska, Nivigratsko, Bara, Petres, and Pedino, while the Limniona comes from Levea. The climate is continental, with cold winters and cool summers that ensure slow ripening and high acidity. Harvesting is done by hand; this is followed by a brief 2-hour maceration and the collection of free-run juice. Fermentation takes place with minimal intervention and very little sulfur, while the second fermentation occurs in the bottle (traditional method). It remains on the lees for 12 months, acquiring a creamy texture and complexity. An Extra Brut rosé sparkling wine, completely dry, that highlights the natural energy and purity of Xinomavro, offering a sparkling wine with exceptional structure, precision, and a long, mineral finish.
