Champagne Filaine "Sensuum Vertigo"

202,80 €

Five years of contact with the wine lees during the autolysis process create that wonderful sensation of uplift that even tasting it alone evokes. Fabrice Gass produces this "jewel" of Campania in very limited quantities each year. It is easier to get your hands on extremely expensive wines than to acquire one of the few bottles of Sensuum Vertigo. With just 4g/l dosage, made in a cellar that looks like it came out of the 19th century and without the slightest trace of technological superiority, the champagne itself, with its amazingly rich texture and delightful oxidative character, seems to perfectly reflect this anachronism. A wine that truly lifts the spirits of those who taste it.

More info

A blend of Pinot Noir, Chardonnay, and Pinot Meunier, with the first of the three varieties dominating. The base wines ferment in ancient oak barrels, without malolactic fermentation, and are then sealed with cork in bottles for the second fermentation. They will remain in contact with the lees for many years. Completely dry, with excellent, fine effervescence and aromas of peat and iodine intertwined with barley and freshly roasted nuts. Green fruit and spicy notes of ginger complement the extremely complex aromatic profile. On the palate, it is rich and lively, with beautiful oxidative hints and a tremendous evolution of flavor, showing tremendous persistence and intensity. A vintage champagne that will age exceptionally well over time.
