Energy, dynamism, and purity—perhaps Envinate's finest white. From an almost forgotten terroir, such as that of Tenerife, Palo Blanco Las Molinas goes beyond the concept of a single vineyard, drawing its character from a specific part of the vineyard (single parcel). It comes from the Los Realejos vineyard, in the Orotava sub-region, in northwestern Tenerife, where the ancient vines of this particular parcel are estimated to be 150 years old. Until 2021, the grapes were part of the Palo Blanco blend, but since 2022, they have been vinified separately for Las Molinas. The wine is not fruity; it is dominated by an intense smoky minerality with hints of sulfur, as if emerging directly from the earth. Completely dry, with moderate body, its almost electric acidity gives it a strict, straightforward sensation in the mouth. A completely terroir-driven wine, almost "provocative" — for those who seek character, minerality, and uniqueness in what they choose to drink.

The fine Listán Blanco grapes from the Los Realejos vineyard are planted at high altitude on volcanic rock and trained using the unique "cordon trenzado" system, characteristic of Orotava. The wine was aged in large Foudre barrels for about 10 months and bottled almost untouched, unfiltered, and with minimal sulfites. The combination of low alcohol and high acidity, characteristic of Listán Blanco in the volcanic soils of Tenerife, offers amazing energy and liveliness, with characteristic salty notes on the finish. A rigorous, complex and refined wine that takes off alongside raw seafood such as oysters.
