Ampelo is a wine with soul, just as the name Canavar suggests: something that "has life." Born on the slopes of Mount Ida in the Çanakkale region, near ancient Troy, it connects myth, nature, and wine in a single narrative. Inspired by Ampelos, Dionysus' satyr lover from whom the first vine sprouted, Ampelo is the first wine expression of the Canavar Bağları project. It is produced from Karasakız, a historic variety of the region, which brings an exceptionally spicy and peppery signature to its characteristics. It is a wine of mild natural interventions, unpretentious, authentic, with a beautiful aroma reminiscent of cherry and framboise alongside its peppery character. Its alcohol is extremely well integrated and deceiving on the palate, with the acidity balancing the wine despite the high alcohol content. And yes, this is our first import from Turkey, a country unknown to us in terms of wine, but with a long history and ancient varieties.

Canavar Bağları's Ampelo is a natural wine made from 100% Karasakız grapes, sourced from 36-year-old vineyards in the Ida Mountains of the Çanakkale region, at an altitude of 250–310 m. The soils are sandy-loamy, facing north to southeast, and yields are extremely low. Cultivation is completely gentle and sustainable, without mechanical means; the soil is tilled, where necessary, with horses and without any mechanical means. Fermentation is completed in 14 days with indigenous yeasts, without the addition of sulfites until malolactic fermentation is complete. Vinification takes place exclusively in stainless steel tanks, with minimal SO₂ (20 ppm) after malolactic fermentation and bottling without filtration. A wine surprise from neighboring Turkey.
