    In Burgundy, Complantation is the regional designation of origin, which blends different proprietary vineyards of the winery from different areas. The blend combines all 13 varieties that are permitted to be cultivated in Alsace, as field blending is the cornerstone of Marcel Deiss's winemaking philosophy. The art of blending different varieties in a vineyard to bring out its characteristics to the fullest is the oldest form of viticulture in the world. With an emphasis on proper viticulture, biodynamic practices, a perfectly healthy ecosystem, and patience and time during hands-off vinification, Complantation is a true "dream." Ripe citrus fruits, a spicy and mellow character, and an energy that forms the "core" in the mouth and brings absolute harmony.

    Grapes of different varieties are harvested and vinified together for as long as it takes, having first ripened to perfection thanks to the winery's meticulous attention to cultivation. With no additives or interventions during vinification, Complantation is the ultimate expression of the Alsace terroir. Calm, complete, and mature on the palate on the one hand, with an exceptional youthful freshness on the other, it is ready to drink now but can be aged for at least another five years. An excellent introduction to the philosophy of one of Alsace's leading wineries.
