The 250 hectares of vineyards of Château de Plaisance are primarily located in the historic appellations of origin Coteaux du Layon Chaume Premier Cru and Quarts de Chaume grand cru, "dedicated" to Chenin Blanc and sweet wines from botrytis. Increasingly, however, the region is a source of dry wines which are of worldwide interest, but which cannot bear the word Chaume on the label, since this only applies to the well-known sweet wines of the region. 'Ronceray' is a dry Chenin Blanc from vineyard plots on the famous hill, with the wine's name being a reference to the abbey that once owned the piece of land of the Quarts de Chaume. A name adopted by the producers of the area to refer to their dry wines since the reference to Chaume is not allowed for them. A Chenin of amazing texture, with breadth, power and creaminess but perfectly dry and with plenty of acidity that washes over you like a "wave of dew".

Ronceray is a wonderful step-up in complexity and intensity from the simple, but also beautiful" Anjou Blanc from Chateau de Plaisance. Harvesting on the Chaume hill is manual and after a gentle cold pressing of the grapes, fermentation takes place with indigenous yeasts. 30% of the wine is matured in Burgundy barrels for 12 months and the barreled part of the wine has undergone malolactic fermentation. The fantastic piece of the historic old vineyards of Chateau de Plaisance on the Chaume hillside that for years was renowned as a source of stunning sweet Chenin seen from a different perspective as one of the Loire's fascinating terroirs for dry Chenin Blanc.
