Improvements in viticulture and winemaking were the first steps taken over the past decade toward producing high-quality retsina wines, and they merely foreshadowed the substantial changes currently underway, centered around Eleni Kechri’s company, 1979 Wines. Kallos is the result of scientific research across the entire spectrum of retsina production and enjoyment: from the grape and the resin, to the production and use of the two basic raw materials of the wine during vinification, all the way to the culture of retsina as it has evolved over the course of 7 millennia. Kallos is the first retsina in Greece produced from sustainably harvested resin (the resin is extracted by chipping the tree without any use of chemicals) and is a great Greek wine (we deliberately avoid using the word “retsina”) that points the way to the future. Innovation, sustainability, and continuous scientific research lead to a stunning wine. Arche (referring to the year 2021) is a complex retsina, with unique balance, depth, and flavor concentration, and it shows the first signs of a wonderful evolution in the bottle. No wine comes closer to the concept of Greek terroir. An almost natural choice that existed, exists, and will always exist.
