Gerard Gauby's white flagship, produced from the ancient Grenache Blanc and Grenache Gris vines. The obsessive care of the vineyards and the application of biodynamic farming principles bring maturity earlier with correspondingly lower alcohol levels. In this way, the unsurpassed balance is maintained in Coume Gineste. Such a balance that gives you the impression that it comes from a much cooler vineyard than it actually is. The texture on the palate is really flattering, honeyed, but with an acidity more reminiscent of Santorini than the French south. Like a stunning Burgundy but one that doesn't need the sophisticated winemaking techniques that often accompany it to impress.

Almost explosive in the nose. Lime and herbs over ripe honeyed fruit and intense mineral notes reminiscent of stone. Citrus freshness on the palate which has tremendous depth and complexity leading to a long honeyed finish. Stunning “chewy” texture and dominant minerality that vibrates the palate in a wine that will age “upshifting” giving ultimately complex dry fruit notes. The wine was left for twenty months in old foudres to mature.
