    Benoit Lahaye significantly ups the ante with this provocative champagne produced with no sulphites added. Violaine is a champagne that aims for the crystal, uninhibited expression of fruit. Biodynamic farming and taking care of the vineyard in an excessive manner provide impeccable grapes. Benoit manages these grapes gently during winemaking with no added sulphites in any stage of the process but also without filtering or dosage. The blend is 50% Pinot Noir and 50% Chardonnay from vineyards in Bouzy and Tauxieres on the limestone terroir of the appellation. A champagne that overwhelms with umami flavors, extremely airy, silky and complex.

    The recipe for creating great wines is simple but demands excessive amounts of labor both in the vineyard and the winery. The dazzling, airy, crystal mineral character of Violaine sets the bar very high and exalts the value of small-scale producers of this appellation who like to do things differently. This is like going in a garden of fruits of grapefruit and red apple combined with a crystal minerality that reminds of the saltiness and umami flavor of oysters. Extremely subtle but layered palate, with exciting texture and everlastingly sharp energy. A champagne that finely combines tension and energy with elegance and finesse. Length, persistence and harmony characterize the utterly natural Violaine.
