Butteax 1er cru by Thomas Pico, is one of the best expressions of the Chardonnay grape. It lies inside the premier cru of Montmains on the left bank of Chablis with vineyards of southeast exposure and an altitude of 300 meters, on soils with an abundance of fossils. The wine comes from old vineyards but Pico does much more by taking care of the vineyard, farming organically, abstains from using any additives at all and “elevates” the wine, as the French call it, naturally. All this dedication leads to an extremely mature wine but adorned with the typical “kick” of the mineral expression associated with the appellation, one that reminds a scent of gun powder and flint. A wine with extreme purity that carries, in itself, the essence of the great terroir of Chablis.

Stylish and extremely complicated on the nose with notes of ripe lemon and citrus fruit marmalade, mint freshness and pompous mineral character along with fine smokiness. On the palate you get a classic -Chablisienne- austerity but with a dense structure and depth of fruit in a yin and yang dance connection that leads to the ultimate balance. The energy in the mouth testifies to the noble origins of this wine that comes from the excellent vineyard of Butteux and leads to an impressively fresh and mineral finish of great length. The wine has matured for 34 months in old oak before being bottled unfiltered and with very low levels of sulphite. It will evolve slowly and beautifully for a decade showcasing its high class.
