The Queen or White Strawberry as it is known in the mountain villages of Paphos is a variety that has traditionally been used as an edible grape and has an aromatic and delicious character. It has notes reminiscent of strawberry and some hints of flowers, honey and marshmallow as well as citrus. The palate is lemony and very fresh but balanced with an oily sensation characteristic of the grape. The name of this micro-vinification comes from the fact that the Queen is in turn a variety that, like Giannoudi and Maratheytiko, is grown in field-blend vineyards (i.e. symbiotic) with other varieties that help it in pollination.

Rare enough to deserve the name Queen, this particular grape is still one of the undiscovered treasures of Cyprus. In the experimental vinification of the variety, which comes from relatively young autochthonous vineyards aged 15 years. Harvesting is manual, followed in the winery by de-stemming without breaking the rails, pre-fermentative maceration for a few hours, mild pressing, and then partial leaching of the must. The fermentations are spontaneous and usually start 2-4 days after the lees are removed and the process is carried out exclusively in stainless steel tanks. This is followed by post-fermentation maturation of the wine with fine lees in the tank for 7 months.
