The grapes come from the mid-slope of the premier cru vineyard Les Laviéres with a southern, south-eastern exposure on limestone soils that give the Pinot Noir a lot of air and finesse. In fact, the name comes from the limestone slabs that were formerly used to cover the roofs of houses, a rock found in the subsoil just thirty centimetres from the surface of this vineyard. A very lively and aromatic style but with old vines approaching seventy years of age doing their magic with excellent texture and intensity of tannins. More full-bodied and serious than the Aux Fournau from the same producer, but always charmingly elegant.

Absolutely traditional vinification with 100% whole bunches and ageing in old barrels for twelve to fourteen months. It's amazing how the old-fashioned approach allows the terroir to shine through, accentuating the subtle differences between the vineyards. Elegant with fine characteristics but with nerve and substance alongside its floral and fruity profile - think rose, cranberry and fresh strawberries with hints of chocolate. On the palate, it's medium-bodied with fine tannins but also an ideal combination of freshness and ripeness in the fruit. The aftertaste seals the wine's minerality, reminiscent of tobacco and gunpowder, and is truly delicious.
