The Jura is a region that operates by its own rules, a region where what is considered “classic” by the rest of the world is often the unconventional choice there. La Mailloche is a high-quality Chardonnay, vinified using the ouillé method (full barrel), meaning without oxidative aging, in contrast to the region’s traditional approach. This choice clearly highlights the Jura terroir, without the intense imprint of oxidation. The result is a wine with structure and body, but also impressive precision. On the palate, it combines a reductive character, minerality, and a gentle bitterness on the finish—an element linked to the soils of the Liassic period that lends exceptional length and intensity. A Chardonnay that balances power and finesse, with a strong sense of the terroir from which it originates.

La Mailloche is one of Domaine Tissot’s finest expressions of Chardonnay, clearly showcasing the character of the Jura terroir through a non-oxidative winemaking approach. Vinification is natural and low-intervention, with spontaneous fermentation in 228-liter oak barrels (approximately 15% new) and extended aging for a total of 24 months. The wine is characterized by volume and structure, balanced by the region’s characteristic acidity and “edge.” The aromatic and flavor profile highlights notes of ripe fruit and minerality, while the finish is exceptionally long and complex. One of the estate’s iconic Vin Jaunes also comes from this same vineyard, underscoring the uniqueness of this particular terroir.
