Tissot's Savagnin Sous Voilé is the intermediate step before the famous Vin Jaune of Jura, a "baby Vin Jaune" with milder oxidation, but perfectly intertwined with the region's style. The wine is vinified in barrels that are not filled to capacity, allowing a thin layer of yeast to develop on the surface (sous voilè). The process is completed in 32 months, which is not long enough to call the wine Vin Jaune, as the latter requires at least 6 years, thus retaining more fruit and freshness. The nose reveals beautiful nutty aromas, notes of freshly baked bread, yeast, and a characteristic saltiness. On the palate, it has nice volume, intensity, and liveliness, but without the eccentric character of the top Vin Jaune wines, making it an ideal introduction to the more traditional Jura winemaking style.

The Jura region remains faithful to its traditions, producing wines that delight connoisseurs, with their oxidative character being their main feature. Tissot's Savagnin Sous Voilé is an extremely interesting wine, with mild oxidation, aged for 32 months in 228-liter barrels without complete filling and always with Tissot's philosophy of minimal intervention, with minimal sulfites and spontaneous fermentation. The nose reveals dried fruits, freshly baked bread, notes of Indian spices, almonds, caramelized fruits, thyme honey, and sea salt. The palate is dry, with volume and "electric" acidity, refreshing the beautiful nutty and salty finish.
